Peach Cobbler Overnight Oats
If you are looking for a way to jazz up your breakfast and eat healthier, check out this Peach Cobbler Overnight Oats recipe that was inspired by @shesgotflavor over on Instagram.
Ingredients:
8oz Mason Jar - I found these on Amazon
1/2 Cup of Quaker Oats - Whole Grain Old Fashioned
Fresh Peach - Diced
Almond or Oat Milk
1-2 tablespoons Honey
1/2 teaspoon of Cinnamon
4 oz Peach Yogurt
Fill 8oz mason jar half way with oats. Next add milk until it barely covers the top of oats. Add 1-2 tablespoons of peach yogurt (do not use the entire 4 oz container). Add a few of the diced peaches, top with 1-2 tablespoons of honey and sprinkle with cinnamon.
Mix ingredients together with a small spoon.
Add top to mason jar and place in refrigerator over night.
Caramelized Peach Topping:
Remaining Diced Peaches
1 tablespoon Butter (reg or vegan)
1 tablespoon Vanilla
1/2 tablespoon of Nutmeg
1 tablespoon Maple Syrup
1-2 tablespoons of Brown Sugar
The next morning in a small pan on med - low heat add butter. Once it has melted, add vanilla, nutmeg, maple syrup and brown sugar. Stir 1-2 minutes or until mixture becomes a dark brown. Add peaches and continue to stir for 1-2 minutes.
Remove pan from heat and let cool for a few minutes before adding topping to overnight oats.
